BBQ Chickpea Flatbread Pizza

Ingredients

  • For the BBQ chickpeas
    ☐ 1 can (540 mL) chickpeas, drained and rinsed
    ☐ ½ cup BBQ sauce
    ☐ ½ tsp smoked paprika
    ☐ ½ tsp garlic powder

    For the flatbread pizzas
    ☐ 4 individual flatbreads or naan-style vegan flatbreads
    ☐ ½ cup BBQ sauce
    ☐ 1½ cups shredded vegan mozzarella
    ☐ ½ small red onion, thinly sliced
    ☐ 1 red bell pepper, thinly sliced
    ☐ ½ cup corn, fresh or frozen
    ☐ 2 green onions, sliced
    ☐ ¼ cup chopped fresh cilantro

    For serving, optional
    ☐ Red pepper flakes
    ☐ Extra BBQ sauce for drizzling
    ☐ Fresh lime wedges

Instructions

1. Prepare the chickpeas
Preheat the oven to 425°F (220°C). Pat the chickpeas dry, then toss them with ½ cup BBQ sauce, smoked paprika and garlic powder.

2. Cook the chickpeas
Spread the chickpeas on a baking sheet and bake for 8–10 minutes, until hot and slightly caramelized.

3. Prepare the flatbreads
Place the flatbreads on a baking sheet. Spread each with some of the remaining ½ cup BBQ sauce.

4. Add the toppings
Top with vegan mozzarella, BBQ chickpeas, red onion, red bell pepper and corn.

5. Bake
Bake for 10–12 minutes, until the flatbreads are crisp around the edges and the toppings are hot.

6. Finish and serve
Top with sliced green onions and fresh cilantro. Add red pepper flakes, an extra drizzle of BBQ sauce or a squeeze of lime if desired.

Pat the chickpeas dry before adding the BBQ sauce. This helps the sauce cling better and lets the chickpeas caramelize instead of becoming watery. For an extra-crispy flatbread, place it directly on the oven rack for the final 2 minutes of baking.

Flatbread → Pita, naan-style vegan bread or pizza crust
