Sticky Sesame Tofu & Broccoli
Ingredients
For the tofu & broccoli
☐ 1 block (454 g / 16 oz) extra-firm tofu, pressed and cubed
☐ 1 tbsp low-sodium soy sauce or tamari
☐ 2 tbsp cornstarch
☐ 1 tbsp sesame oil
☐ 4 cups broccoli florets
For the sticky sesame sauce
☐ ¼ cup low-sodium soy sauce or tamari
☐ 3 tbsp maple syrup
☐ 2 tbsp rice vinegar
☐ 1 tbsp sesame oil
☐ 2 cloves garlic, minced
☐ 1 tsp fresh ginger, grated
☐ 1 tbsp cornstarch
☐ ¼ cup water
For serving
☐ 3 cups cooked jasmine or brown rice
☐ 2 green onions, sliced
☐ 1 tbsp sesame seeds, optional
☐ Sriracha or chili flakes, optional

Instructions
1. Prepare the tofu
Preheat oven to 425°F (220°C). Toss the pressed tofu cubes with soy sauce, cornstarch and sesame oil until evenly coated.
2. Bake the tofu
Spread tofu on a parchment-lined baking sheet in a single layer. Bake for 20–25 minutes, turning halfway, until golden and crispy.
3. Cook the broccoli
While the tofu cooks, steam or sauté the broccoli for 4–5 minutes, until bright green and tender-crisp.
4. Make the sticky sesame sauce
In a small saucepan, combine soy sauce, maple syrup, rice vinegar, sesame oil, garlic and ginger. Mix the cornstarch with the water, then stir it into the sauce. Simmer for 3–5 minutes, stirring, until thick and glossy.
5. Coat the tofu
Add the crispy tofu to the sauce and gently toss until every piece is coated.
6. Assemble
Divide the rice and broccoli between four bowls. Add the sticky sesame tofu and top with green onions and sesame seeds. Add Sriracha or chili flakes if you like a little heat.

For extra-crispy tofu, press out as much moisture as possible before cubing it, and give the pieces plenty of space on the baking sheet. If they’re crowded, they’ll steam instead of crisp.
